Which size do you choose for a tripel?
The 40 cl glass is the standard size for abbey beers and tripels. You pour in about 30 cl of beer and still keep room for two to three fingers of foam, which seals the aromas into the glass.
Why does my head collapse so quickly?
Almost certainly grease in the glass. A fingerprint or a trace of washing-up liquid breaks the head down within half a minute. Rinse the glasses well and do not dry them with a cloth that has been near greasy dishes.
What does the stemmed model add?
The foot keeps your hand off the bowl, so the beer warms up more slowly. That shows most with beers you drink slowly, such as a quadrupel, and it gives the glass more height on the table.
How do you pour a specialty beer?
Hold the glass at an angle and pour against the side until it is two thirds full. Then set the glass upright and pour the rest from a height through the middle, because that drop builds the head.
