What is the difference between a coupe and a coupette?
A coupe is the wide, shallow champagne bowl of around 20 to 25 cl. A coupette is the same idea in bar format: slightly smaller, with a steeper wall, so a shaken cocktail does not slop over the rim when it is slid across.
Which cocktails do you serve in a coupette?
Anything that is shaken and strained and reaches the table without ice. Think of the daiquiri, the white lady, sours and the margarita without a salt rim. Drinks with ice belong in a tumbler or long drink glass.
How many cl should a coupette be?
Sixteen to twenty-three centilitres works best in practice. After dilution a shaken cocktail measures 10 to 14 cl, so the glass is then about two thirds full and the rim stays dry while serving.
Do you need to chill a coupette first?
Yes. Because no ice goes into the glass, the starting temperature determines how long the cocktail stays cold. Put the glass in the freezer for ten minutes, or fill it with iced water while you shake and pour that away just before serving.
