How many cl should a cappuccino glass be?
A classic cappuccino is 15 to 18 cl, so a glass of 20 to 25 cl gives the right fill with room for the collar of foam. Larger glasses of 33 cl and up are in practice meant for latte macchiato or tea.
Is a double-walled cappuccino glass better?
It keeps the coffee noticeably warmer for longer and the outside stays cool enough to hold without a handle. The drawbacks are the price bracket and the chance of condensation between the walls. For fast service in hospitality, single-walled glass is fine.
Why does my cappuccino cool down so fast in glass?
Usually because the glass was cold when you poured. Rinse the glass with hot water first and pour that away just before use. A glass that is too large also speeds up cooling, because the hot coffee has to warm a larger wall.
How do I get coffee residue out of a glass?
Brown residue is greasy and does not dissolve in ordinary washing-up liquid. Soak the glass for half an hour in warm water with soda crystals or a cleaning tablet for coffee machines, rinse well afterwards and dry with a linen cloth.
