What is the difference between the standard café glass and the small one?
The small glass is narrow and holds about 19 cl, which keeps the beer cold until the last sip. The café glass is wider and runs from 29 to 34 cl. The café glass is the standard measure in a Dutch bar, the small one is the quick glass.
What is a Willi Becher glass?
A straight glass that flares slightly towards the top and narrows again just below the rim. That kink holds the head. The model is stackable, usually comes in 33 or 40 cl and is also used for soft drinks in hospitality.
Why does my beer head collapse straight away?
Almost always because of grease in the glass. A fingerprint or a trace of washing-up liquid breaks the head down within a minute. Wash beer glasses separately from greasy dishes, rinse cold and let them drain upside down on a rack.
Can a lager glass go in the freezer?
Better not. The film of ice that forms on the wall acts as a nucleation point for carbon dioxide, so the beer foams over and the head collapses. Rinse the glass briefly with cold water before you draw instead.
