How many cl should an Aperol Spritz glass be?
At least 50 cl, because otherwise you cannot fit in enough ice and the drink warms up within ten minutes. Between 50 and 58 cl is the practical standard, and with large ice cubes you move towards 63 to 74 cl.
What is the right ratio for a spritz?
Three parts prosecco, two parts Aperol and a splash of sparkling water. Pour the prosecco in first; you then barely need to stir and lose far fewer bubbles than with the reverse order.
Why does a spritz glass have a stem?
Without a stem your hand warms the bowl, and with a drink that depends on being cold that makes a noticeable difference. The short, sturdy stem keeps the bowl clear without making the glass top-heavy.
Can I use a gin and tonic glass for a spritz?
Yes, in practice it is the same balloon bowl. The shape comes from Spain, where it was used for gin and tonic, and only later became the standard glass for the Italian spritz.
How much ice goes into a spritz?
Fill the glass to the rim with ice, so not two cubes. Plenty of ice melts slowly and hardly dilutes, while a little ice melts away fast and makes the drink watery within minutes.
