Which stirrer length do I need?
Choose on your tallest glass. A stirrer of 18 cm just clears a highball glass and stays visible, while it disappears in a tall hurricane. Take the 20 cm version there, so the top stays above the rim.
Can copper stirrers go in the dishwasher?
Better not. A long cycle attacks the copper layer and leaves spots. Wash copper stirrers by hand and dry them straight away. The stainless steel versions can go in the machine as normal without discolouring.
How do you stir a highball without breaking the ice?
Set the stirrer against the wall of the glass and make short, vertical strokes from bottom to top instead of circles. That brings the heavier syrup up from the bottom while the ice stays whole, so the drink dilutes more slowly.
Why does copper darken?
Copper reacts with air and with the acid in citrus, so the surface takes on a dark glow over time. Plenty of bars think that looks good; if you want it gone, buff the stirrers with a soft cloth and a little lemon juice.
