How long should wine stand in a decanter?
For a young red wine, twenty to thirty minutes in a wide decanter is enough. Longer rarely adds anything and after a few hours you start losing fruit. An old wine you pour over and serve straight away.
What is the difference between aerating and decanting off?
Aerating means bringing oxygen into a young wine to soften tannins, and that calls for a wide decanter. Decanting off means separating clear old wine from its sediment, and that calls for a narrow model instead.
What size decanter do I need?
A bottle holds 75 cl. A 75 cl decanter fits exactly but leaves little room to swirl. If you want to open up a young wine quickly, take at least a litre so the wine forms a thin layer.
Can a decanter go in the dishwasher?
No. The neck is too narrow to rinse through and detergent leaves a matt haze on crystal glass. Rinse with lukewarm water without soap and let the decanter drain upside down on a drying stand.
Does white wine need decanting too?
With full, oak-aged white wine it helps, and there are narrower models made for that which keep the wine cool. Crisp, light white wine gains little from it and loses its tension through too much air.
