What is rum?

Sugarcane, a barrel and a warm climate

Rum is a distilled spirit made from sugarcane. This can be done in two ways: from molasses, the thick black syrup left over when sugarcane is processed into sugar, or from freshly pressed cane juice. Molasses is by far the most widely used and gives the rounded, sweet note that most people associate with rum. Fresh cane juice produces a rum that is grassier and earthier. The sugarcane is fermented and then distilled, usually in column stills for a light style and in pot stills for a heavier, fuller rum. The legal minimum is 37.5% alcohol; in practice, most falls between 37.5 and 45%.

Rum has hardly any strict rules about aging or origin, which explains why the bottles vary so widely. What always plays a role, however, is the climate. In the Caribbean, Venezuela or the Philippines, temperatures are high all year round, so rum reacts with the wood more quickly and much more evaporates each year than in Scotland. A seven-year-old rum from the tropics therefore tastes more mature than you might expect based on its age. When reading a label, also pay attention to sweetness: with spiced rum and rum liqueurs, sugar and flavoring are often added after distillation, and you can taste that immediately.

What types of rum are there?

Four styles you’ll find on every shelf

The color says something about aging, but not everything: dark rum is sometimes colored with caramel, and white rum may well have been aged. These are the styles used to organize the shelf.

White rum

Light and dry, often aged briefly and then filtered to remove the color. It lets the citrus and sugar in a cocktail shine instead of overwhelming them.

What does rum taste like?

Naturally sweet, warm from the cask

Nose

Vanilla & caramel

Almost always vanilla and caramel from the oak, along with ripe fruit: banana, pineapple, or dried apricot. Rhum agricole, by contrast, smells grassy and earthy.

Palate

Round and smooth

Rum tastes sweeter than other spirits, even without added sugar, because sugarcane naturally brings that note. Spiced rum adds cinnamon and clove on top.

Finish

Warm and long

Short and clean in a young white rum; long and warming in an aged rum, with oak, cacao, and sometimes a hint of orange peel.

How to drink it

Three ways to drink rum

Rum is the only spirit that can be both the basis of a summery highball and a bottle for beside the fireplace. It depends on the style you have in your hands.

In a Mojito

5 cl white rum, 3 cl lime juice, 2 cl sugar syrup and a handful of mint in a tall glass, topped up with crushed ice and a splash of sparkling water. Press the mint gently against the side of the glass; don't bruise it, or it will turn bitter.

Neat or on the rocks

Pour an aged rum at room temperature into a tumbler or tulip-shaped tasting glass, with at most one large ice cube. Give it some time: after a minute or two, the vanilla and dried fruit really begin to emerge.

What is rum made from?
From sugarcane. Usually from molasses, the syrup left over from making sugar, and sometimes from freshly pressed cane juice. This is fermented and distilled, after which the rum may or may not be aged in oak barrels. As a result, rum comes from anywhere sugarcane grows: the Caribbean, Latin America, Suriname and the Philippines.
What percentage of alcohol is in rum?
At least 37.5%, as that is the legal minimum for rum. In practice, most falls between 37.5 and 45%. Because of the added flavorings, spiced rum falls outside that definition and may be lower: Captain Morgan Spiced Gold, for example, is 35%. Overproof rum, on the other hand, is well over 50%.
What is the difference between white, golden and dark rum?
Primarily aging. White rum is young or filtered and remains light and dry, golden rum spends several years in oak and develops notes of vanilla and coconut, while dark rum is aged longer and is fuller-bodied, with dried fruit and toffee. Color alone is not proof: dark rum is sometimes colored with caramel.
What exactly is spiced rum?
Rum to which spices such as vanilla, cinnamon, cloves and ginger have been added after distillation, almost always together with sugar. This makes spiced rum sweeter and smoother than regular rum, and it mixes easily with cola or ginger beer. Rum liqueurs and rum creams are even sweeter and usually contain around 15 to 20%.
What is rhum agricole?
Rum made not from molasses but from freshly pressed sugarcane juice, a style from the French Antilles such as Martinique and Guadeloupe. It tastes grassier, earthier and less sweet than molasses rum. Its character comes through best in a Daiquiri or a Ti' Punch.
Why does young rum from the tropics taste so mature?
Because of the warm climate. In the Caribbean, Venezuela or the Philippines, it is warm all year round, so rum reacts more quickly with the oak and much more evaporates each year than in a cool climate. As a result, a seven-year-old rum from the tropics tastes more mature than a whisky of the same age from Scotland.
