Bar Professional WDT Coffee Tool
Bekijk de gehele collectie
This WDT tool from Bar Professional stirs through the coffee bed with fine needles before you tamp. WDT stands for Weiss Distribution Technique. It is intended for anyone who wants to break up clumps in the grounds and achieve more even extraction.
What clumps do to your espresso
Freshly ground coffee rarely comes out of the grinder loose. Static charge makes particles stick together, and those clumps create dense spots in your bed. Water always follows the path of least resistance, so it flows around the clump instead of through it. The result is channeling: part of your coffee is over-extracted, another part barely extracted, and your cup tastes sour and bitter at the same time. A few seconds of stirring with the needles breaks up those clumps and distributes the grounds evenly. Then tamp with a tamper.
Technique and maintenance
Insert the needles into the bed until they are just above the bottom and make small circles without pressing the grounds against the wall. Five to ten seconds is enough; stirring for longer adds nothing and actually compacts the bed. Then tap it briefly so the surface is level, and tamp immediately. Wipe the needles clean after your shift and store the tool upright so they do not bend. The rest of your equipment can be found among the barista tools and barista accessories.

Over het merk
Bar Professional
