What is The Dalmore 12 Years Sherry Cask Select?

Why this 12 tastes different from the regular one

The Sherry Cask Select starts like every Dalmore: in American oak that previously held bourbon. Then comes the difference. While the regular 12 Years spends part of its time in oloroso sherry casks, this version is finished in three different Andalusian sherry casks, selected in collaboration with bodegas in southern Spain. Three types of sherry wood mean more layers: the whisky becomes richer and more layered.

The second difference is the strength. The regular 12 goes into the bottle at 40% ABV, while the Sherry Cask Select is bottled at 43%. Those few extra percentage points give it more body and a longer finish, and they mean that a drop of water really adds something here. Please note: this bottle is released as a limited edition, so once it's gone, it's gone.

The sherry casks are immediately apparent on the nose: dried fruit and a sweet, dark richness, with the orange associated with The Dalmore underneath.

Palate

Rich and layered

Fuller and sweeter than the regular 12. The 43% ABV gives the flavor more weight, so sherry, orange, and chocolate linger longer on the palate.

Finish

Warm and long

A warm, long finish in which the sherry wood continues to resonate. A few drops of water make it smoother and sweeter.

How to drink it

How to get the most out of the Sherry Cask Select

This whisky is made to be tasted neat. Its higher strength makes it ideal for experimenting with a little water.

Neat, then with water

Pour 30 ml into a tulip glass and taste it neat first. Then add three or four drops of water with a pipette or straw and taste again: at 43%, the sherry notes open up more clearly.

Next to the standard 12

Pour 20 ml of the standard Dalmore 12 and 20 ml of Sherry Cask Select side by side into two identical tasting glasses. This lets you taste exactly what three sherry casks and 3% extra alcohol do.

40 ml Sherry Cask Select, 25 ml sweet vermouth, and 25 ml Campari, stirred with ice and poured over a large ice cube with an orange zest. The sherry beautifully balances the bitterness.
